This substance is used as a quality improver, pH regulator, metal ion chelating agent, binder, and leavening agent. In canned beans, fruits, and vegetables, it can stabilize natural pigments and protect food color. In canned meats, it can emulsify fats and maintain a uniform texture. It improves water retention in canned meats and meat products and helps prevent fat spoilage. When added to beer, it can clarify the liquid and prevent cloudiness. It is also an excellent water softener without precipitates.
